Olivier roll in pita bread is a colorful appetizer on the festive table. Contrary to popular belief that it is extremely difficult to create, I can assure you that the dish is prepared quickly if you have already boiled and cooled vegetables and chicken eggs on hand.

Use oval or rectangular pita bread, but be sure to be long and not short. In general, creating a salad is no different from the usual, folk recipe with milk sausage. If desired, you can replace this meat product with boiled chicken or beef.

By the way, you can cut all the ingredients in advance and mix them, and season them just before putting the filling on the pita bread. This way, the shelf life of the dish is not reduced, because it is seasoned with mayonnaise last.

Milk sausage - 300 g

Boiled potatoes - 2 pcs.

Boiled eggs - 3 pcs.

Pickled cucumbers - 2 pcs.

Boiled carrots - 1 pc.

Canned peas - 150 g

Green onion - 15 g (1 bunch)

Mayonnaise - 3 tbsp.

Lavash - 3 sheets (long)

Salt - 3 pinches

1. Peel boiled and cooled potatoes and rinse in water. Cut into medium cubes and place in a container. There is no need to chop finely so that when mixing you do not end up with a porridge of all the products.

2. Cut the milk sausage in the same way, freeing it from the casing. Pour the cuttings into a container.

3. Peel the boiled carrots and cut into cubes.

4. Following the carrots, cut the pickled cucumbers into cubes and leave the cuttings on the cutting board for about 5 minutes so that the brine comes out of it. At this time, open the jar of green peas and drain the marinade, and pour the peas into the container along with the cucumber slices.

5. Peel boiled chicken eggs from their shells and rinse in water. Cut into small cubes. Wash the green onion stalks, chop them and add them to the container along with the chopped eggs.

6. Add a little salt, add mayonnaise and mix gently. The salad is completely ready!

7. Place all three sheets of pita bread on a board, one on top of the other. Place the prepared salad on the top sheet.

8. First, fold the edges of the pita breads inward.

9. Cut the roll immediately before the pita bread is soaked, otherwise it will tear later. You will need a very sharp knife. Do not make the slice thickness less than 1.5 cm, otherwise the filling will fall out of the pieces. Place the cut pieces on a plate and place in the refrigerator to soak for at least 30 minutes.
