Shredded potatoes are made into pancake-like fritters and lightly pan-fried for the perfect crunchy texture that pairs deliciously with any breakfast dish.
Homemade crispy pancakes: a healthy breakfast

2 medium reddish brown potatoes, grated
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying or as needed
salt and pepper for taste

1. Rinse the grated potatoes until the water runs clear, then drain and pat dry.
2. Place the pieces in a bowl and mix with onion, flour and egg until evenly distributed.
3. Heat about 1 inch of oil in a large heavy skillet over medium heat. When the oil is hot, place the potatoes in a 2.5cm thick layer in the pan. Cover the entire bottom of the pan, or make individual stacks like pancakes.
4. Fry until the bottom is browned, then turn over and brown on the other side. Each side should take at least 5 minutes. If you are cooking them in one large piece, it can be cut into quarters for easy flipping.
5. Remove from pan and pat dry on paper towels. Season with salt and pepper and serve immediately.
