Strawberry Spinach Salad

1. In a large bowl, whisk together the lemon juice and mustard. While whisking, slowly pour in the oil until the dressing is combined. Season with salt and pepper.

2. Add mini spinach, chicken breast washed, cut into small pieces and sautéed until tender, strawberries cut into slices, ½ cup roasted pecans, and finely chopped onions to the bowl with dressing and toss to combine.

3. Divide the salad among bowls and sprinkle with the remaining pecans and a generous crumb of feta.
