Eggplant caviar according to a family recipe

Eggplant caviar remains a popular dish both in summer due to the fact that eggplant is in season, and in winter, as it can be prepared for future use and stored in the refrigerator.

Ингредиенты

Eggplant - 1.5 kg

Onion - 4 pcs

Garlic - 4 large cloves

Tomato puree - 100 gr

Vinegar 3% - 30 gr

Vegetable / olive oil - 55 gr

Parsley - large bunch + some cilantro

Salt - to taste

Black pepper - to taste

1. Rinse the eggplants, chop with a knife, put on a baking sheet and send to bake in an oven preheated to 200 ° C at a medium level. Mode - top / bottom without convection. Bake for 30-40 minutes until soft.

2. Cool the prepared eggplants, peel, chop with a knife into small pieces.

3. Heat the pan, add oil, fry the finely chopped onion until golden brown.

4. Add tomato puree to the onion, mix. Cover with a lid for 2 minutes.

5. Next, add the eggplant and simmer for 20 minutes on a low-medium heat, stirring occasionally.

6. Add grated garlic, chopped herbs, vinegar, as well as salt and pepper to taste, cover and simmer for another 10 minutes

7. We send eggplant caviar to the refrigerator for several hours, and preferably for a day for better disclosure of taste, after which you can serve it with slices of toasted bread.
