1 tablespoon olive oil

2 large eggs

salt and ground black pepper to taste

1 tablespoon butter, softened

2 slices Italian bread

Swiss cheese

cheddar cheese

½ ripe avocado, sliced

Heat olive oil in a skillet over medium heat.

Crack the eggs into the pan; cook for 1 to 2 minutes.

Flip and cook the egg until tender, 2 to 5 more minutes.

Transfer the eggs to a plate and season with salt and pepper.

Spread butter on 1 side of each slice of bread.

Heat a skillet over medium heat.

Place the slices of bread in the heated skillet, oil side down.

Quickly top with swiss cheese, 1 fried egg, cheddar cheese, 1 fried egg, avocado and remaining slice of bread butter side up.

Carefully flip the sandwich to cook the other side until golden brown, 3 to 4 minutes.

Remove the sandwich from the pan and cut in half.
