These healthy turkey tetrazzini are a lighter version of a classic. They are cooked with turkey, zucchini and a creamy Parmesan cheese sauce. This dish is perfect for a weeknight dinner or to serve to guests.

1 pack of egg noodles
2 tablespoons butter
1 can chopped mushrooms
2 cups chopped boiled turkey
1 can thickened cream of celery soup
1 cup sour cream
1 teaspoon salt
⅛ teaspoon pepper
½ cup grated parmesan cheese

Bring a large pot of lightly salted water to a boil. Add noodles and cook until al dente, 8-10 minutes.
Preheat oven to 190 degrees C.
Meanwhile, melt the butter in a large heavy skillet. Drain mushrooms, add to skillet and cook, stirring, 1 minute. Add turkey, condensed soup, sour cream, salt and pepper.
Drain the noodles and place them in a 9x13 inch baking dish. Pour the turkey mixture evenly over the top. Sprinkle with Parmesan.
Bake in preheated oven until sauce starts bubbling, 20 to 25 minutes.
