Today we will prepare the chimichurri sauce. Chimichurri is a classic Argentinean sauce that is quite versatile and goes well with many dishes.

The sauce goes great with steak, grilled shrimp, and even veggies like fried zucchini.
It can be used as a marinade for beef or chicken, or you can pour it over freshly grilled meat while it rests on a cutting board.
This sauce would even go well with scrambled eggs. Garlicy, very grassy and tangy from the vinegar and lemon zest.

Parsley - 1 tbsp.
Garlic - 3 cloves
Fresh oregano - 2 tbsp.
Olive oil - 1/3 tbsp.
Red wine vinegar
Lemon zest optional - 2 tsp
Pinch of red pepper flakes

1. Combine parsley, garlic and oregano in the bowl of a food processor. Pulse until the herbs are finely chopped and the garlic is minced. (If you don't have a food processor, you can chop the herbs and garlic with a knife.)
2. Transfer the herbs to a medium bowl and add the olive oil, vinegar, and lemon zest, if using. Season with salt and a pinch of red pepper flakes.
