2 large eggs
1 teaspoon Dijon mustard
¼ cup grated parmesan cheese
1 tablespoon minced fresh green onions, plus more for garnish
1 garlic clove, minced
1 teaspoon salt or to taste
½ teaspoon freshly ground black pepper, or to taste
2 cups chopped boiled broccoli
½ cup grated carrot
2 tablespoons olive oil

1. Mix eggs and mustard in a bowl; stir until well blended. Mix together parmesan cheese, green onion, garlic, salt and pepper.
2. Add chopped broccoli and grated carrots; stir until the ingredients are evenly mixed together.
3. Heat olive oil in a large skillet over medium heat.
4. Divide vegetable mixture into 8 equal portions and shape into 7cm patties. Add to hot oil in skillet and cook until browned, 3 to 4 minutes. Reduce the heat to medium-low, flip the broccoli patties and cook until browned, 3 to 4 more minutes.
5. Transfer the patties to a warm serving platter and garnish with fresh scallions, if desired.
