Iasi: African chicken

A delicious dish of African cuisine, which is prepared simply, but it turns out very juicy, with an oriental touch in taste.

Chicken yassa is an African dish, simple but incredibly tasty. Yassa is prepared from young chickens or their individual parts: legs, thighs. Completely simple ingredients turn ordinary chickens into incredibly tasty ones. This dish is very popular in Mauritania and Senegal. The recipes differ quite a bit.

Chicken - 1.2 kg

Onion - 2 pcs.

Lemon - 1 pc.

Salt - to taste

Ground black pepper - 10 g

Olive oil - 2 tbsp

Water - 150 ml

1. Squeeze the juice from the lemon and pour it into a bowl, add olive oil (1 tablespoon). We spread the chicken meat, cut into portions, in a bowl with oil and lemon juice. Add salt and ground black pepper.

2. Onion cut into small cubes.

3. We shift the onion into a bowl with the chicken. Mix well the meat with marinade and onions.

4. Cover the bowl of marinated chicken with cling film and refrigerate overnight.

5. We take out the chicken meat from the marinade. Don't throw out the marinade!

6. In 1 tbsp. vegetable oil, fry the chicken meat on all sides until golden brown for 10-15 minutes. Take the meat out of the pan and transfer it to a plate.

7. In the same pan, fry the onion together with the marinade until the onion is transparent, adding the remaining olive oil, it will take 5-7 minutes.

8. We return the chicken pieces to the pan, add water to cover the meat, and simmer the dish for 25 minutes over low heat, until cooked and the marinade is almost completely evaporated.

9. Serve chicken yassu with rice or couscous. Bon appetit!
