Summer freshness: top recipes for original lemonades
Moscow chefs have revealed the secrets of making the best soft drinks.

Summer is the time to discover new tastes. In the restaurants of the capital, you can try lemonades with the taste of coffee, jasmine, berries... But they are easy to make at home:
1. Matcha + orange
The recipe is shared by the head barista of Kalabasa Daniil Saulenko. We'll need
Vanilla Syrup:
Sugar - 150 g
Water - 300 ml
Vanilla pod - 3 pcs
Freshly squeezed orange juice - 100 ml
Vanilla syrup - 35 ml
Water - 30 ml
Matcha powder - 1.5 g
Ice
In a saucepan, mix sugar and water, add the contents of the vanilla pods, cutting them lengthwise. Boil everything to dissolve the sugar. remove from fire and let cool. The resulting liquid is filtered and cooled. Fill the glass one third with ice, pour cold syrup on it, and orange juice on top. Shake matcha with water and add this mixture to the glass.
2. Peach + mint
The chef of the Soul restaurant shares the recipe. We'll need
Peach - 1 fruit
Soda - 130 ml
Sugar - 22 g
Mint - 3 g
Citric acid - 0.6 g
Combine water, mint and sugar. Add chopped peach to it. We put the mixture in a vacuum bag, put it in sous vide for two hours. After we filter it all and add citric acid.
3. Jasmine + aloe
Valeria Usova, head bartender of the FLØR restaurant, shares the recipe. We'll need
Jasmine flower cordial - 70 ml
Aloe juice - 30 ml
Soda - 200 ml
Jasmine flower cordial:
Jasmine flowers - 40 g
Water - 1 l
Sugar - 5 g
Citric acid - 15 g
Pour boiling water over jasmine flowers and leave for an hour. After the broth, strain and add the remaining ingredients. Serve chilled (you can add ice cubes or ice in silicone for soft drinks.
4. Pineapple + passion fruit

Passion fruit puree - 30 g
Puree pineapple - 20 g
lime juice - 15 gCane sugar syrup - 15 g
Mineral sparkling water - 150 g
Put fruit puree in a glass, pour in lime juice. Add sugar syrup, mix, pour cold mineral water on top.
